Dipping Sauce( Tsukedare)

The slices of meat and vegetables can be enjoyed with a variety of dipping sauces, another of the uniqu aspects of Shabu Shabu cuisine.
These dipping sauces can also be used as Japanese-style dressings for salad and other vegetables.
Serves 4 people
Ponzu dipping sauce[ approx. 57kcal (239kJ)/person]
・200ml soy sauce
・60ml rice vinegar
・60ml water
・Juice of half a lime

Sesame dipping sauce[ approx. 73kcal (307kJ)/person]
・100g tahini (sesame paste)
・40ml rice vinegar
・25g white miso paste
・20g honey
・15g soy sauce
・10g sesame oil
・5g mustard powder
・A pinch of chilli powder
・100ml water

Spicy Herb dipping sauce[ approx. 69kcal (290kJ)/person]
・30g dill
・30g coriander
・1 clove garlic
・20g ginger
・120g soy sauce
・60g rice vinegar
・Juice of half a lime
・1 small green chilli
・20g white sesame seeds
Dipping Sauce( Tsukedare)
  • 1 Ponzu dipping sauce: Mix the soy sauce and rice vinegar in a bowl, dilute with the water and add a squeeze of lime juice to freshen up the flavour.
  • 2 Ponzu dipping sauce: Mix the soy sauce and rice vinegar in a bowl, dilute with the water and add a squeeze of lime juice to freshen up the flavour.
  • 3 Spicy Herb dipping sauce: Put all the ingredients in a mixer and blend into a paste-like consistency.
